For the Labor Day holiday I have made my special homemade Sour
Creme Banana Cake. I thought in the spirit of the festivities, I
would share it. Try it. It’s wonderful! Happy Labor Day
everyone!
Sour Creme Banana Cake
Mix Together
- 1/2 c. unsalted butter softened
- 2 c. fine sugar
- 2 whole eggs and 4 additional egg yellows
- 3 c. unbleached flour double sifted with 6 T cornstarch
(substitute 3 c double sifted cake flour) - 1 tsp. soda
- 1 c. sour cream
- 1 tsp. vanilla
- 3 ripe mashed bananas
Bake at 350 degrees for one hour in a well-greased and floured
tube or bundt pan. Remove from oven when long wooden toothpicks
come out clean.
Glaze
- 1/2 c butter
- 1 pkg cream cheese
- 2 ripe mashed bananas
- 2-4 T cream (use as much or as little as needed to get right
consistency) - 4 c powdered sugar
Poke some holes in the bottom of the cake with a skewer or fork
very gently before you take it out of the pan. Then spread some glaze
on and allow to sink in the cake bottom for a bit. This allows for
additional moisture inside the cake. Remove from pan and glaze top
while warm and then again in thirty minutes just before it is cool. Finish with some pastry cream piped around the bottom. Cut and serve. 8-10 servings. We like to serve slightly warm with a
small amount of additional glaze on the plate swirled with a spoon
for additional sweetness and decoration. Finish with a light
dusting of powdered sugar and a sprig of mint.
