I have celiac disease – an intolerance to wheat, rye and barely. My boyfriend and I are talking about getting married next year. I want to be able to enjoy my wedding cake without getting sick at the reception or the honeymoon. What can you suggest to help me with the cake options without putting my guests within my diet limits?

Having Celiac Disease is most certainly no piece of cake. Most of the time, if you find a recipe without flour, you should be fine, but finding a recipe that is gluten free is the best option. Below are some sites that offer some gluten-free recipes and one that offers a directory of cake vendors who cater to those with gluten-free needs. Also, you might want to look at some vegan recipes and see what they might be able to provide. Keep in mind that most of these cake recipes are meant for small numbers and providing for large numbers of guests might mean doubling, tripling, or maybe guazuppling the recipe. Call local cake providers and see if they will cater to your needs. Perhaps the bakery can make a cake just for you and make a regular cake for the general guests. Be creative and don’t worry. It can all be worked out to accommodate you.
